1 tablespoon canola oil
1 large onion, finely chopped
4 medium garlic cloves, minced
3 tablespoons jalapeno peppers, minced
2 tablespoons sun-dried tomatoes, minced
1/3 cup tomato paste
3 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 pound lean ground turkey (breast meat if possible)
1 pound lean ground beef
1/2 cup bread crumbs
1/2 cup low-fat milk

2 cups plum tomatoes, finely diced
1/2 cup white onion, finely minced
1/2 cup cilantro, minced
2 tablespoons cider vinegar
1 teaspoon sugar
Meatloaf – Heat the oil in a large skillet over medium-low heat. Add the onion and garlic; sauté until soft, but not browned. Transfer to a large mixing bowl. Add the peppers, sun dried tomatoes, tomato paste, chili powder, cumin, and cayenne to the onion mixture, combining well. Add the turkey, ground beef, bread crumbs, and milk, combining thoroughly.
Transfer to a 9×5-inch loaf pan. Bake in a preheated 350° oven 1 1/2 hours. Test for doneness. Remove from the oven and let rest 10 minutes before slicing.
For the salsa, combine the tomatoes, onion, cilantro, vinegar, and sugar. Serve with the meatloaf.
